We are currently facing some issues with our email server. This is sending multiple emails to our users, which is not intentional. We are working very hard with our hosting provider to resolve this issue and are trying to get this fixed as soon as possible.

We apologize for any inconvinience this may have caused and we will try our best to avoid this in the future.

Thanks,

Aloo Dum, Chhole, Rajma, Paneer curries are all time favorites at home. But too much of these savories make us worry about the effect of so many spices on the health of our family. There are different tips and tricks to follow that add both flavor and nutrients to these dishes. Here are some of them:

  1. Add some spinach puree to the ingredients that we add to Dum Aloo, Matar Paneer, Chhole or Rajma. After cooking the veggies for sometime with the spices, the taste of spinach is no longer obvious but instead you have a yummy curry ready with you. Spinach is rich in iron. So if some of the family members are reluctant to have spinach as a part of their diet, this is a perfect workaround to feed them with it.
  2. Adding bottle gourd or lauki instead of spinach to the above recipes also serves the same purpose, that is to make spicy cooking healthy. Lauki is rich in Vitamins C and D.
  3. When kids just refuse to have lentils as part of their meal, a good solution could be to use lentils like chana, urad, etc in the preparation of fried rice, poha, upma, fried idly and many other dishes. The trick is to add raw lentil to the oil along with other ingredients and then fry till golden brown. The kids usually like the crisp lentils. Adding some peanuts may as well enhance the taste further.
  4. Milk is essential for kids and adults alike since its a source of so many vitamins and nutrients. For people who sulk from milk adding flavours from fruit essences apart from health drinks might enhance the appeal. Many fruit essences like pineapple, vanilla, strawberry etc. can be easily found in the market. Milk tastes great even when blended with some dry fruit boosts like cashews, almonds, pistachios along with cardamom. One other thing you can do is to add fruits like apples, strawberries, bananas, blueberries to the milk and blend it in a thick shake garnished with cherries, no artificial flavors added. Adding granola toppings as well might be a good idea. A simple recipe to good health!
  5. While cooking the veggies, it might be a good idea to cook some veggies half and thus keeping them half raw. This is good for the metabolism and it also prevents all the nutrients of the vegetables from being lost due to over-cooking. Vegetables that taste good even when cooked half include cabbage, lettuce, spinach, bell-pepper, radish, carrot, beet-root etc. Adding vegetable toppings of lettuce, spring onions, cilanthro, mint, sprouts, etc. to some curries or other savories may help raise the health index as well. Even dry fruits like cashews, raisins, walnut, almonds, etc may be added as toppings to some curries or fried rice.

You can go ahead and try out the tips with these recipes:

Pohe

We are sure you all have great ways to make the recipes healthier. Don’t forget to share them with our readers…

Deep frying…. Deeper satisfaction!

Filed under: Cooking Techniques on Thursday, June 12th, 2008 by admin | 51 Comments

Deep frying is one of the most popular cooking techniques that gives your food amazing taste and flavor, if done right. You can sauté, you can bake, you can braise and you can even grill; but nothing comes even close to the texture and taste of the deep fried snacks. It surely adds some calories to your diet; but in the end it is all worth it!

You can get the perfect deep fried snacks every time if you follow some simple rules and techniques:

  • Deep frying will give you the best results if your oil is at the right temperature. If the oil is not hot enough, the food becomes soggy as it absorbs a lot of oil. If the oil is too hot, food will quickly burn without getting fully cooked. In general, deep frying should be done with the oil at 365 degrees F or 185 degrees C. You can use a simple cooking thermometer of your choice to monitor the oil’s temperature. Adjust your flame to maintain the temperature ones the oil reaches this temperature. If you do not have a thermometer, it is good to reduce the flame before the oil starts smoking. You can also do a small ‘test fry’ to check that the temperature of the oil is correct before you start frying the real batch.
  • Use any oil with a high smoking point for deep frying like peanut oil or vegetable oil but not the extra virgin olive oil. It is also good to use plain, unflavored oil.
  • Do not overcrowd the pan with your snacks because that will bring down the temperature of the oil making the food mushy and full of oil which is a big no-no.
  • Be very careful while in front of the hot oil. Keep your face away from the hot oil whenever you are deep frying. It can splatter very easily and burn you. Keep little children away from it. Also avoid getting any water in the oil. Use dry pans and spoons.
  • Use any kind of slotted metal spoon for deep frying. This will help in draining as much oil as possible from the food when it comes out of the oil.
  • The best time to season (salt, pepper etc.) the deep fried food is right after it comes out of the oil. Food will be very hot at this point and will absorb the flavors of the seasonings very well.
  • Use a cooling rack to cool the deep fried food. It will help in draining some more oil from the food. You can also keep it on the paper towels to get the oil absorbed but make sure the steam does not make the food soggy.
  • Avoid reusing the oil for deep frying. If you have to, make sure you remove the food that is left in it from the earlier frying. These food bits can burn when you reuse the oil and affect the flavor.

Follow these simple rules and enjoy your perfectly fried delicacies! Here are some amazing deep fried snacks that are easy to make and super delicious:

Paneer Pakora
Dal Bhajia
Bread Roll
Potli Samosa
